Classic Minestrone
A hearty vegetable and bean soup with pasta. Vary the vegetables with the season — the base stays the same.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 400 g canned tomatoes
- 1.5 L stock
- 200 g cannellini beans, drained
- 100 g small pasta
- Salt, pepper, oregano
- Parmesan and basil to serve
Method
- Heat oil, sauté onion, carrot, celery 8 minutes. Add garlic, cook 1 minute.
- Add tomatoes and stock. Boil, then simmer 15 minutes. Add beans and pasta, cook 10 minutes.
- Season. Serve with Parmesan and basil.
