Farro Salad with Tomatoes & Herbs

Nutty farro tossed with cherry tomatoes, cucumber, fresh herbs, and a bright lemon vinaigrette. Great for meal prep.

Farro Salad with Tomatoes & Herbs

Ingredients

  • 200 g farro
  • 200 g cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • Fresh parsley and mint, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • Salt and pepper

Method

  1. Cook farro in salted boiling water for about 20 minutes until tender but chewy. Drain and cool.
  2. Toss farro with tomatoes, cucumber, onion, and herbs.
  3. Dress with olive oil, lemon juice, salt, and pepper. Serve at room temperature or cold.
