Bruschetta al Pomodoro

Grilled bread rubbed with garlic, topped with ripe tomatoes and basil. The perfect antipasto to start any Italian meal.

Ingredients

  • 4 thick slices of rustic bread
  • 4 ripe tomatoes, diced
  • 1 clove garlic, halved
  • Fresh basil, torn
  • Extra virgin olive oil
  • Salt and pepper

Method

  1. Grill or toast the bread slices until golden and slightly charred.
  2. Rub each slice with the cut side of the garlic.
  3. Mix diced tomatoes with basil, olive oil, salt, and pepper. Spoon onto bread. Serve immediately.
