Peppery arugula with sweet ripe pear, shaved Parmesan, and a simple lemon dressing. Elegant and effortless.

Arugula, Pear & Parmesan Salad

Ingredients

  • 100 g arugula (rocket)
  • 1 ripe pear, thinly sliced
  • 50 g Parmesan, shaved
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper
  • Optional: walnuts or pine nuts

Method

  1. Arrange arugula on a plate. Top with pear slices and Parmesan shavings.
  2. Whisk olive oil and lemon juice with salt and pepper. Drizzle over the salad. Add nuts if using.
